I like just garlic salt and pepper sealed in tin foil and thrown on the grill. But my friend turned me on to something just as simple.

mix some mayonnaise with sambal to taste. Lightly salt and pepper. Use the sambal mix sparingly on the mahi and wrap tight with tin foil. Wicked.... but you gotta have da beer nearby. Oh and don't forget ..... it tastes better with 2 or 3 of your best friends chowing down with ya. :D

salt and pepper, flour, then dip in egg wash and fry.

Here is my special tartar sauce:

finely minced lemon zest-about half a lemon
2 tablespoons of capers, drained and chopped.
mayonnaise and lemon juice to loosen the sauce.
Pepper to taste.

If you have Kafir Lime leaves, add a couple of them, finely minced.

Here's one of my favorites.

soak a cedar plank in white wine
sea salt and cracked pepper to taste the mahi
Fire up the BBQ to about 400 degrees
place the mahi on the cedar pank and place on the BBQ until the fish is cooked through

I also make mahi ceviche. I'll look for the recipe now.

1 pound mahi sliced thinly
1/2 Tbsp sea salt
1/4 Tbsp ground pepper
1/4 cup lime juice
1/4 cup lemon juice
1/8 cup orange juice

1/4 cup finely chopped red onion
1/2 serrano chile, ribs and seeds removed, minced
1/4 cup chopped cilantro
1/4 cucumber, peeled diced into 1/2-inch pieces
1 avocado, peeled, seed removed, cut into 1/2-inch chunks
salad greens to serve four

Soak the mahi in the juices with the salt and pepper for a few hours. Remove the mahi from the juice and gently squeeze it to remove some of the excess moisture. portion the mahi ceviche on to the salad ingredients.
