Scale and clean the fish. Do not remove the filets from the center bone. Stuff the stomach cavity of the uhu with chopped onion, green onion, crushed Hawaiian chili pepper, chopped lup chong, roasted ground sesami seeds and Hawaiian salt. Wrap the fish in ti leaves (the way laulau is wrapped) and cook on the hibachi for 20 minutes per side...longer for a bigger fish.

After pau clean um......I mix oyster sauce with mayonaise, then paste that buggah all inside, outside, all over with that. I like to stuff portuguese sausage, lup chong, spam, maui onion, whole garlic cloves, green onion, and season to whatever you like.
I like Moooooooooooooooi!

Cut meat off the bone and cut in to long stick like pieces. Salt and pepper to taste and dip in beer batter and deep fry. Serve with tartar sauce.

If you dont want to use the hibachi, put in the oven in a pan. Put very little water very little... and squeeze half a lemon on it. Maybe a little ginger, cover with foil and then bake it for about 25 to 35 minutes. Comes super soft, then get your seasoning (salt and taste) over the fish. Heat up peanut oil (reason for peanut oil is its high heat retetention) until its smoking in a separate pan then drop like 5 crushed fresh garlic on it and stir like 5 to 10 seconds and pour it on the fish (that already has seasoning on it). Very good, very deliciious. I've had stuffed Uhu with mayo and sausage, but it tastes the same whether you have uhu or not. You can just bake sausage, mayo and onions and it still tastes the same...
Waiting for the fish to bite is the most exciting feeling!

Fillet the Uhu, cut into large slices, like you see in restaurants, soak in shoyu-sugar for 6 hours (overnight too long, comes salty)...add green onions and grated ginger to sauce when you start the soak....after soaking, take out and roll in corn starch and deep fry, corn starch makes it more crunchy.....after pau cook, dip in sweet sour sauce or Mae Ploy, then grind....the bigger the Uhu the better, more meat.......but personally I gotta say, I don't shoot Uhus anymore, not too many left, gotta be Mr. Conservation.
