any recipes for ta'ape??

Steamed Chinese style somebody told me was ok tasting. If you got bigger kine sized taape you could even fillet them (if your good with a knife) then fry um up.

Then again if you get big one pound size das SASHIMI right dea :mrgreen: .



I prefer toau though, i haven't eaten taape in years.....

Steamed ta'ape with shoyu, ginger, green onion and chung choy (salted and dried daikon):

Clean and butterfly the fish, then place in a bowl. Cover with grated ginger, thinly sliced green onion and chung choy. Apply the amount of shoyu you'd normally use when seasoning fried ta'ape, then add 50% more shoyu since it'll get watered down while steaming. Steam the fish in a pot until it's just cooked through, no more than that. At the end of the fish steaming period, pour 3/4 cup of peanut oil into a sauce pan and heat it on high until it just starts to smoke. Place the steamed fish with all the seasonings and the juice on a serving dish. Pour the hot oil over the fish, and serve.

I like it pulehu style with chilipepper water (same as kala). Real good eating....and I am finicky and like only a few kinds of fish to eat :o

taape and toau have such a poor reputation(when it comes to taste/quality),but if seasoned and cooked right its actually pretty good(and not to mention your helping the reef by removing these invasive species :wink: )

I don't mind either toau or taape, cause they are both snappers.
Taape gets a bad rep cause of it's color - if you can get past the color (after cooking) they are all good.
I like mines either deep fried with a crispy flour coating or saute'd butter, garlic, salt, pepper...

i like to hemo the skin if i fillet em, ta'ape skin tends to get tough and rubbery when cooked. dried ta'ape isn't bad if you got the time
